My. Dessert. Saturday. Night.

I have been making a lot of juices with pineapple in recently but was missing EATING pineapple. I always used to eat pineapple with passion fruit but wanted to mix it up. I remember a few years ago my brother made me grilled pineapple with mint. Tonight I made it again.

Ingrediants 

One large pineapple
Mint
Brown Sugar

Method

Cut the skin off the pineapple, of course, no one wants to eat pineapple skin.

Cut the pineapple how ever you want it. I would suggest either thick wedges or slices like I did. 
For slices, top and tale the pineapple. Get rid of that hard bit. Then simple lay it down and cut. You'll get nice circles. Mine were roughly a centimeter thick. 

Either head up your griddle or turn the grill on. If your cooking under the grill line your grill tray with foil.

Lay the pineapple slices out on the tray.

Finely chop your mint. By doing this you release the flavor a lot more. 

Sprinkle the pineapple slices with a little bit of brown sugar then equally divide your chopped mint between all the slices and sprinkle it on top of the pineapple.

Put your tray under the grill for around 10 minutes.

Keep an eye on it, you don't want burnt pineapple !

Your pineapple will go nice and soft, caramelized and  will be simply delicious ! 

This is a lovely guilt free sweet dessert. I had mine on its own but you could serve it with fat free natural yogurt.

My healthy curry








I made a healthy curry woop. I put everything in this curry that I would never normally put in a curry. I have never disliked vegetables. I have just always been weird about food. I would eat veg with my roast dinner or with a chicken breast but I didn't want them in a curry or casserole. Yes, I told you, I'm weird. 

Ingredients 

Pataks curry paste

3 gloves of garlic (or less, depending on your liking)
One chunk of ginger
 a few cardimun pods
1.5 pints of chicken stock
1 tin of light coconut cream
salt
pepper
chilli flakes
lemon grass
1 bag of spinach
several carrots
1 bunch of broccoli
half a courgette (its all I had left! )
3 peppers
1 bag of pea snaps


Method

I finely chopped the ginger and garlic. I love both. So had loads. Top Tip : Add a pinch, or a large pinch, depending on  your taste, of salt to the ginger and garlic when you chop it and it chops a lot finer and makes a nice garlic / ginger paste. I learnt that when I learnt to cook in college :)

I pretty much just chopped everything up and chucked it all in the slow cooker with 1 and a half pints of chicken stock and have left it to cook for 6 hours. Mmmm that chickens gonna be so tender.

I fried the garlic, chili, lemon grass, onion and cardiman off first with a few sprays of fry light. 

I will serve it with brown rice and no naan bread, boo :( 









Lime and coconut energy bites



Today I had my first full day off in ages so decided to bake some goodies.
Since starting this clean eating be healthy shizz  I have been following a tonne of healthy blogs , Facebook pages and instagrams. I kept on seeing these no bake energy balls and I was pretty intrigued. I keep craving sweets or chocolate so needed something to satisfy my sweet craving. 


This morning I cycled to sainsburys on my lovely pink bike to buy the ingrediants.

I will start off with the lime and coconut ones 

I bought a bag of pitted dates, flaked almonds, cashews,  vanilla essence, grated coconut and limes.

Ingredients
  • 1/2 cup almonds
  • 1/2 cup pecans
  • 1 1/2 cups  dates, pitted
  • zest and juice from 3 key limes
  • 1/2 cup unsweetened coconut
  • Raw coconut oil
  • Vanilla essence
  • salt
Method
  • I put the almonds and cashews in my food processor. I pulsed the nuts until they were finely chopped and started to make a bit of a paste. I added the dates, not all at once, as the blender wouldn't be too happy. I blitzed the dates then added the rest and carried on blitzing till the dates and the nuts started to blend together. I then grated 3 limes and added all the zest and juiced the limes adding all the lime juice. I put a little bit of salt in, added a small bit of raw coconut oil and continued to blend.  Once all blended I moved the mixture to a bowl. I sprinkled out a thick layer of the grated coconut on a board and started to make 1 inch round balls in the palm of my hand before rolling them in the coconut.
  • I continued making my balls untill all the mixture was gone then stored in an air tight container in the fridge for 2 - 3 hours till their fully set.
Altogether it took me around an hour. Im sure it will take a lot less time next time now I know what im doing. Pretty simple really and they are full of goodness, cant wait to tuck in tonight !

I really should be more organised. My plan was to blog about my juicing progress but I forgot. Ooops !

Juicing went well, I did one week. I wasn't hungry, all the juices were great and filled me up... One problem... I weed about 1 million times a day.

I had a few slight headaches but I read that was getting all the toxins out of my body, so I guess thats a good thing. 

I found I became more organised. (Not with this blog, ha ! ) But with my life. I started making my juices the night before I had a 7.30 shift, my bag was packed, I was buying the food and prepping it all. No more lazy ass. I had sooo much more energy. I wasn't sleeping till 2pm when I had a 3pm start, I was getting up early on my late shifts and getting up on my days off. I was having less afternoon naps. My mood got better. My skin got slightly better. Still a long way to go but I can see it improving.

I even went to the gym a few times.

I started eating again on day 8, small, light, healthy meals. I cut out all bread, potatoes, pasta and stodgy things. I swapped white rice for Bulgar wheat, flavored it with paprika, onions and garlic and it tastes good and is much healthier. I had big prawn salads with oranges, spinach, nuts, avocado and apple. YUM !
